Beer-Candied Orange Peels

As a maker of yummy edibles, my recipes often come from an inspiration ingredient. This week, that was so. While perusing my local bottle shop, I happened upon a bottle of Southern Tier’s newest offering, Choklat Orange. It’s a new version of their chocolate stout (Choklat). Mind you, I already know I love using Choklat as an ingredient, as it’s the star of my Easy Choklat Stout Cupcakes.

I ended up making two recipes with the Choklat Oranj that can stand on their own, but that also work together. Since the one is best if it sets for a couple days, we’re going to cover that first.

Beer-candied orange peel. Sweet, complex and melt-in-your-mouth delicious, you’ll love this little treat. Eat it on it’s own or use it as a garnish on the Choklat Oranj fudge recipe I’ll be posting soon.

Beer-Candied Orange Peels
recipe adapted from Epicurious

2 oranges
3 cups sugar + 1 cup sugar
1 1/2 cups water
1 1/2 cups Southern Tier Choklat Oranj Stout

Cut the oranges into wedges (8 pieces each). Using a paring knife, remove the peel of the orange from each wedge. Be careful not to get too much of the pith. (If you do get a lot, you can use your paring knife to cut it away.) Slice into thin strips.

Boil in a large pot for 15 minutes. Drain and rinse.

In the same large pot, bring 3 cups of sugar, water and stout to a boil over medium heat. Stir until sugar is dissolved. Add in your peels. Simmer over low heat for 45 minutes. Be sure to keep an eye on it as the beer gets bubbly.

Line a baking sheet with parchment paper. Dump the remaining cup of sugar into a large bowl.

When peels are done simmering, drain them. Toss them in the sugar (be careful to separate them). Place in a single layer on the parchment paper. Let set for a day or two before devouring and/or saving for a special purpose or gifting.
