As a follow up to last week’s beer-candied orange peel recipe, I wanted to give you guys another chance to cook with the Southern Tier Choklat Oranj. While the candy is delicious on its own, I wanted to use it to enhance another recipe: orange fudge.
I’ve been wanting to make a fudge recipe that uses beer as an accent and not a tack-on. It makes me think of those chocolate oranges we used to get around the holidays… but more decadent, more adult and more lovely. It’s rich, silky smooth and a perfect balance of chocolate and orange. Garnishing with the beer-candied orange peel just brings it up to the next level.
Make it for potlucks during the summer, make it for holiday parties and gifts during the winter, just make it.
Classy as Fudge
recipe adapted from Marshmallow Fluff
2 ½ cups sugar
¼ cup butter
¼ cup evaporated milk
½ cup Southern Tier Choklat Oranj stout
1 orange, zested
1 7 ½ oz jar Marshmallow Fluff
¾ tsp salt
¾ tsp orange extract
12 oz semisweet chocolate pieces
beer-candied orange peel (recipe here)
Spray an 8×8 baking dish with cooking spray, set aside.
In a large saucepan, combine the sugar, butter, evaporated milk, stout, orange zest, Fluff and salt. Cook over medium heat. Bring to a low boil, stirring constantly. Cook until everything is combined, about five minutes.
Remove from heat and stir in orange extract and chocolate. Pour into prepared pan. Sprinkle the candied orange peel on top.
Refrigerate until set.
*You may want to run a sharp, non serrated knife under hot water for an easier time cutting the pieces.
